On here, I will add my take on food, share a few links that I found helpful and useful, along with recipes that I have created.
Breakfast
Almond Coconut Flour Pancake
What you need (makes 1 large or 2 small):
2 large eggs (or 3 egg whites)
1/4 cup Almond flour
2 tbsp Coconut flour
1 tbsp Raw and unfiltered (ideally local) Honey
splash of water
splash of apple cider
dash of baking soda
dash of salt (optional)
1/2 tbsp raw & unrefined coconut oil
Optional: Greek yogurt, butter, fruits or applesauce
Preparation:
Mix dry and wet ingredients separately, then merge. Heat the coconut oil in a pan, then turn down to medium heat. Pour batter in pan. Brown pancake 3-4 minutes on both sides.
Serve:
(1) Top it with mixed berries.
(2) Serve it with a cup of greek yogurt to add protein.
(3) Add a bit of butter and the honey on top.
(4) 1/2 cup applesauce and a spoon of greek yohurt.
Tip:
Leave the honey out when mixing and add it on top of your pancake instead.
